Well good morning to me! I just discovered the most wonderful breakfast delight and I had to share!
Last night’s dinner resulted in some leftover rice and quinoa. We blend them a lot for nutritional variety and more interesting tastes! This is an excellent on-the-run recipe for a hearty warm breakfast:
3/4 cup cooked quinoa/rice
small handful of buckwheat
1/2 cup vanilla soy milk
handful of raisins
1 peach, sliced
small handful of green grapes
3-4 walnuts
1 tsp cinnamon
Mix grains and milk together. Add fruit and nuts and cinnamon. Microwave for 2 1/2 – 3 minutes. Stir and enjoy!
Note – the vanilla soy is already pre-sweetened and I felt no need to add more. You could always add your favorite sweetener, especially if you use unsweetened milk. The cinnamon is a great trick for weaning off sweeteners, by the way! It adds a punch of flavor without an ounce of sugar.
