This recipe is kid tested and mom approved. The biggest issue is going to be getting mom to share it! Is there anything more refreshing than a cool bowl of your favorite ice cream on a hot summer day? Now you can do it without all of the guilt! There’s no refined sugar, and since there’s no dairy, it’s actually good for you, won’t compromise your health or make you more prone to cancer. And it’s cruelty free as well – that’s what I call a triple treat – win-win-win! Actually this is an amazing treat if you’re trying to pump some extra calories into children who are burning off more than they can sit down and eat!
Ingredients:
1/2 cup cashews
1/4 cup unsweetened almond milk
2 1/2 frozen bananas
1 Tbsp hemp seed
2 Tbsp baking cocoa
Directions:
Soak cashews in almond milk in high speed blender and let sit as long as you can stand it (ideally an hour or two, but I know that’s not always feasible. It’ll work even if you rush it, but it won’t be as smooth). Add bananas and hemp seed and blend until smooth. Add cocoa powder and blend on low speed until color is consistent. You certainly can add the cocoa powder along with everything else but I find it just puffs up into a big cloud and doesn’t end up quite where it’s supposed to be!
