Sweet potatoes are nature’s candy. This colorful root vegetable is as tasty as it is nutritious. It’s packed with fiber, protein, beta carotene, vitamin C, vitamin B6, iron, and calcium.
My new favorite recipe follows. I know it’s kind of hard to believe, but it really is incredible:
Pre-heat oven to 400 degrees.
Poke a few holes in a sweet potato
Place the potato on a baking tray
Bake at 400 degrees for 1 hour
Remove from oven. Let cool 10 minutes.
Cut potato in half and scoop flesh into a bowl
Mash with a fork and serve
This recipe should be enough for a side dish for 1-2 people depending on your hunger level. The recipe can be modified as needed to increase the number of servings. Simply add more potatoes 😉
