Looking for a hearty tasty breakfast that everyone will love? Try these guilt-free waffles for a power-packed delight!
2 ripe bananas
2 1/2 -3 cups gluten free oats
1/4 cup oat milk (soy and almond work great too)
1 tsp cinnamon
1/2 tsp vanilla (sugar-free alcohol-free if possible)
2 Tbsp ground flax seed
6 Tbsp warm water
1 1/2 cup fresh fruit, chopped. Raspberries, mango, strawberries, and blueberries make for a delightful treat but most fruit will work great.
Optional: For an extra protein punch, add 1 Tbsp each of chia seeds and hemp seeds.
Yields 4 classic waffles.
Preheat waffle iron. Combine flax and water and set aside to thicken. With a fork, smash the ripe banana until it is soft and squishy like pudding. Stir in milk first then add oats, cinnamon, vanilla, and optional seeds. Stir in flax and water mixture which will act like an egg to bind ingredients better.
Spoon batter onto hot waffle iron, filling all the nooks and crannies. The batter will be much less runny than typical pancake batter but that’s ok, trust me.
Let run for the full cycle and then another few minutes.
Use a rubber spatula to peel the waffles off the iron.
Top with fresh fruit and a light sprinkle of cinnamon. Enjoy!
