I created this recipe to be a calorie booster for my toddler, free of all the additives found in most grocery store milks. It’s full of Omega-3’s, vitamins, and minerals that can be hard to find elsewhere.
Ingredients:
1/2 cup blanched almonds
1/2 cup raw walnuts
1/4 cup rolled oats
1/4 cup shelled hemp seed
1/4 cup raw sunflower seeds
1/4 cup ground flax seeds
For a nut-free version, omit almonds and walnuts, and increase oats and hemp.
Directions
Place all ingredients in high speed blender on medium speed until everything is a fine powder. Increase speed to high and use tamper to push everything toward the center so it gets everything pulverized. Mix will thicken to a crumbly almond butter consistency.
Transfer mix to airtight container for storage. This will make several batches. Place 4 Tbsp of almond mixture back in the blender and add 6 cups lukewarm water. Blend on low for a minute then let soak 10-30 minutes if possible. Blend again on medium for a minute after soaking.
Strain through nut bag into storage pitcher. I hang my bag on the kitchen cabinet knobti let the milk filter on its own for a few minutes. By the time I clean up the kitchen, it’s done! Refrigerate and serve cold.
Depending on what you’re used to, this may taste a little bland or earthy but I assure you it’s packed with powerful nutrients and your taste will adapt quickly (remember how skim milk tasted when you first switched from whole or 2%??)! You can mix into smoothies, oatmeal, or any other recipes where milk is called for until you’re ready to drink as-is.
You can also add some dried dates, cinnamon, and/or pumpkin pie spice for a delightful drink. Serve hot or cold and enjoy!
