Here’s a favorite from Alicia Silverstone’s The Kind Diet
2 cups uncooked green lentils
1 cup orange juice
2 Tbsp jelly (any kind of fruit will work)
1 cup chopped walnuts
1 cup fresh fruit (raspberries, blueberries, peaches – almost anything would work)
1 cup dried fruit (raisins, craisins, sour cherries, currants – again almost anything would work)
1/2 cup fresh chopped parsley
Cook lentils according to package directions – usually simmers 15-20 minutes but it can vary.
Rinse lentils in cold water to stop cooking and cool off
Transfer to mixing bowl
Add walnuts, fresh fruit, dried fruit, and parsley and mix gently
In a separate bowl whisk orange juice and jelly to break up jelly into somewhat smooth mixture
Add juice to lentils and mix gently
Chill at least 1 hour before serving if possible.
Great dish to make the night before. Leftovers are even more flavorful!
This dish will taste like a fresh and fruity side salad that’s sweet enough to work as a dessert but will fit right in with a simple lunch or a fancy dinner. It’s also packed with protein, vitamins and minerals, is low fat and super satisfying!
