Lentils and Caramelized Onions
This has GOT to be one of the easiest, best recipes I know.
2 cups dried green lentils
1 bay leaf
1 1/2 – 2 onions
1 tsp cumin
Follow package directions to boil lentils with bay leaf – usually takes about 45 minutes. Get those started first.
Peel and slice up the onions very thin. Keep in rings or cut smaller if desired. Cook 5-10 minutes on med-hi heat in wide bottom fry pan. Use just enough water or veggie broth to prevent from sticking. Onions have their own water and sugar so you don’t need to add much. Once carmelized nicely, lower heat to simmer, stir in lentils and cumin. Let simmer 5-10 minutes and serve over brown rice or plain.
