This my new favorite recipe!
Kelp noodles are a creation from mother earth, modified just a little bit to make them a perfectly delectable dish! They are just raw kelp leaves, stripped of the outer shell. The inner kelp has a clear noodle-like consistency and a taste so neutral that it’ll work as a pasta substitute in any dish you can think of. I tried it in a pad thai recipe and couldn’t have been more impressed!
Chop 1 red pepper
Thaw and peel 1 cup edamame
Slice 1 cup mushrooms
Sautee all the veggies in 2 Tbsp water or veggie broth for about 5 minutes
In a saucepan, heat the following:
3Tbsp soy sauce
3 Tbsp peanut butter
3Tbsp lime
3 Tbsp maple syrup
Once the peanut butter melts, stir to a smooth consistency and remove from heat.
Rinse the kelp noodles and add to the veggies. Add the sauce and toss all ingredients to coat evenly. Simmer 1-2 minutes over low heat to heat the noodles.
Serve and enjoy!
