Here’s a great power boost to kick off your Meatless Monday! Smoothies are a fabulous way to get some fresh fruits and vegetables in especially when you’re in a hurry. They’re also an ideal way to get loads of vitamins and minerals into kids who might have a hard time sitting still long enough to as many veggies, or seniors who might have trouble digesting a lot of raw veggies. Here’s a fresh and tasty one to try today.
Ingredients:
2 cups chopped kale
1 banana, peeled
3/4 c peaches, frozen (or frozen berries)
1 small orange, peeled
1/4 c tofu
1/4 c orange juice
1 c plant milk (Here’s one of my own recipes from scratch)
1 tsp cinnamon
1 c ice
1 Tbsp hemp, chia, ground flax seed (optional)
Instructions:
Place all ingredients in high speed blender. Blend on high for 1 minute or until desired consistency. Serve immediately and enjoy.
Prep time: 5 minutes
Yields: Three yummy 8 oz servings
