There’s a crazy misconception that a healthy plant-based diet is void of pleasure. That’s crazy-talk! The truth is very much the opposite, so I want to arm you with easy and quick recipes for some of my favorite go-to treats! No one will have any idea how healthy they are.
Ice Cream
2 frozen bananas (peeled before freezing!)
Blend in high-powered blender 30 seconds or until smooth, and serve. That’s it. I told you it would be easy!
For variety, try adding 1 orange and 1/2 cup ice; 3-4 strawberries; 1/2 cup canned pumpkin and 1 tsp cinnamon.
Top with chopped walnuts or peanuts
Pumpkin Pie Smoothie
1/2 cup canned pumpkin
1 cup almond milk
1/2 cup ice cubes
1/4 cup chopped dates
1/4 tsp vanilla
1/4 tsp cinnamon
pinch nutmeg
Blend all ingredients in high powered blender until smooth. Drink and enjoy!
Pumpkin ‘Latte’
This is my newest fall treat. It’s my take on the ever popular pumpkin spice latte. This version is caffeine free, naturally sugar free, and gentle on the tummy. It’s all the warm and toasty and tasty, but without the jitters, addiction, and stomach intestinal irritation.
1 1/2 cups vanilla soy milk (any plant milk works)
3-4 Tbsp canned pumpkin
pinch of nutmeg
pinch of cinnamon
Bring milk to a simmer over medium heat. Add all ingredients to a blender. Blend for 10 seconds and serve. You can add sweetener to taste, but I find the cinnamon is a fabulous replacement for sweeteners! Try adding more cinnamon first – you might be surprised.

I now use clove regularly, and I should note I started using a milk frother too! It really makes a difference in mimicking the feel of a coffee house latte. I bought one at Ikea for $1.99….
